Maine
Twelve serves modern New England cooking on Portland’s waterfront, with seafood and produce from Maine at the centre of its approach. Chef-founder Colin Wyatt returned to the state after working at Daniel and Eleven Madison Park in New York. Executive chef Hannah Ryder brings experience from Café Boulud, Aquavit and Maine restaurants to the kitchen. The restaurant occupies the former Building 12 Pattern Storehouse, a historic brick structure carefully dismantled and rebuilt at its present site in 2022. That industrial background gives the dining room a particular connection to the waterfront’s past. Dinner and cocktails are complemented by a wine programme led by sommelier Jenn Forge, while local makers contributed pottery, furniture and other details to the space.
