Under Grain occupies the historic lower level of the Rosselli-AX Privilege hotel on Merchants Street in Valletta. Diners pass the kitchen on their way to a dining room beneath a vaulted stone ceiling, creating an intimate setting within the seventeenth-century building. The cooking takes a creative approach to classical cuisine. An à la carte menu also allows guests to assemble their own tasting experience, rather than following a single fixed sequence. Wine receives comparable attention, with a selection spanning several countries and a particular concentration on Italy and France.
