Under is an underwater restaurant at Lindesnes on Norway's southern coast. Designed by Snøhetta, its dining room sits below the sea's surface, with a large window making the surrounding marine environment part of the meal. A seasonal set menu draws strongly on Norwegian seafood, while also including ingredients from the land. The kitchen adapts dishes to fishermen's catches and the produce available, and a vegetarian menu provides another way to experience its cooking. Wine choices accompany the courses.
