Wild Sage sits within Jackson's Rusty Parrot Lodge & Spa, beside Flat Creek with views towards East Gros Ventre Butte. Its cooking follows the growing season and the ingredients supplied by regional farmers, ranchers and producers, so dishes can change from day to day. A recent menu paired local beef tartare with chilli oil and tapioca crisp, halibut with whey and smoked trout roe, and venison loin with lobster mushrooms and bordelaise. Lamb appeared as grilled rack and twice-cooked belly, while vegetable-led Blue Tree rice brought lemongrass and pickled pepper into the meal. Wine and cocktails accompany an approach that allows local produce to share the table with a wider range of culinary influences.
