Zazu
Ecuador

Zazu is a contemporary restaurant in Quito led by Ecuadorian chef Wilson Alpala, whose early career included time in France. The cooking draws on Latin American influences and local ingredients, with the chef working closely with farmers and a selected group of coastal fishermen. Vegetables also come from the restaurant's own greenhouses. Wood, glass and clean lines give the dining room a restrained character. A tall wine cellar is a defining interior feature, and a full vegetarian menu offers an alternative to the restaurant's broader repertoire.
