Zilte occupies the ninth floor of Antwerp's Museum aan de Stroom, with panoramic views across the city. Chef Viki Geunes leads a kitchen in which fish, crustaceans and shellfish form a central thread, complemented by produce from trusted suppliers. Tasting menus have included scallops with smoked daikon and pike roe, Dover sole with celeriac prepared in a katsuobushi style, and Belgian chocolate with persimmon, sake kasu and cardamom. A dedicated vegetarian sequence and à la carte dishes provide alternatives. The experience begins with appetisers in the lounge, where the first preparations are visible, before continuing at the table. Wines by the glass can be selected around individual preferences.
