Zing Zing is Secret Bay's intimate open-air restaurant above Tibay Beach in Dominica. Following its reopening, it seats only 20 guests each evening and serves a six-course Discovery Menu led by chef Allison Lo, who comes from Sabah in Malaysia. Daily sourcing shapes the meal, drawing on fresh fish, seasonal fruit and vegetables, local herbs, nearby farms and the resort's organic garden. The canopy setting and display kitchen bring the surrounding landscape and food preparation into the dining experience. Three cocktails are developed for each evening's service, and a wine flight offers another way to accompany the menu. A private dining room adds a separate space within the restaurant.
